  • Description

This mushroom knife is for foragers of mushrooms.  It’s the sort of knife to take on foraging expeditions, or simply on country walks in the autumn when there’s the chance of coming across wild mushrooms.

The knife has a bird’s beak blade which is made of stainless steel and is designed for clean cutting of mushrooms.  The knife handle is made of oiled beech wood and is shaped for easy gripping.

At the end of the beech handle are four bundles of bristles which are for brushing off any soil or leaf litter from the mushroom.  The reason this is so important is that mushrooms should never be washed as they absorb water like a sponge.  The best way to clean mushrooms is to brush off any dirt as they are picked and then to wipe them with a damp cloth when back in the kitchen.

    18cm long

As with all foraging, the land owner’s permission should be sought and care should be taken to ensure only edible mushrooms are picked.  If in doubt there are plenty of useful online guides to help identify mushrooms.

    Gernot Redecker

Brush and broom maker in northern Germany

Friedrich Redecker was born in northern Germany in 1908 and started going blind from the age of four.  In those days making brushes was the standard trade for the blind, so that is what Friedrich set about doing.  Only he was more successful than most and built a small brush and broom making business that supported his family and continued until his death at the age of 71.

After Friedrich’s death his youngest son Gernot took on the responsibility for winding down the business, but instead of bringing the business to a close discovered there was such high demand for the brushes at local fairs that he decided to expand.

Several decades later Fredrich’s son Felix has now joined the business and the range of brushes and brooms has expanded considerably.  As well as having a reputation for very high quality products, the family is also famous for its innovation, which happens at their dedicated ideas workshop. Their focus is on blending modern contemporary design with traditional materials and crafts.
