  • Description

Foraging may be the latest food trend, but we often forget that it was second nature to our rural ancestors, who roamed the country lanes to gather edible flora and succulent berries, especially during nature's more bountiful seasons.

Fiona Bird's book, The Forager's Kitchen, is a compendium of over 100 field-to-table recipes from the author's experience and passion as one of life's tenacious foragers. After covering the 'ground rules' for foraging (misidentification: 'if in doubt, leave it out'), and useful kit (tools, clothing and kitchen equipment) five chapters focus on Flowers and Blossom, Woodland and Hedgerow, Fruits and Berries, Herbs, and Sea and Shore.

Within each there are simple recipes from cakes to cordials, oatcakes to culinary oils. Be inspired by Seaweed and Butternut Squash Cakes, Chocolate Sugar Kelpmores (sugar kelp was a favourite of Orkney children who ate it like sweets), Wild Garlic Bread, Quince and Wild Thyme Sorbet, Salted Caramel Wild Hazelnut Shortbread, or Douglas Fir Chocolate Pots... the list is endless.

This book will change the way you look at wildlife, and if you're an intrepid outdoor adventurer it may even transform the way you cook!

Fiona Bird is a graduate of The University of St. Andrews, mother of six and a former BBC Masterchef finalist. Currently dividing her time between Angus and the Outer Hebridean Isle of South Uist, Fiona can often be seen on a bicycle with a basket full of seaweed or other wild edibles. She's also a wild food blogger for The Huffington Post UK.
